Swabian Pancakes

Swabian Pancakes, also known as “Schwäbische Pfannkuchen,” are a delightful dish hailing from the Swabian region of Southern Germany. This versatile and delicious recipe is perfect for both savory and sweet variations, making it a beloved staple in German households.

Ingredients:

  • 200g all-purpose flour
  • 200ml milk
  • 4 large eggs
  • A pinch of salt
  • 2 tbsp butter or oil (for frying)
  • Optional fillings:
    • Savory: Bacon, cheese, spinach, or mushrooms
    • Sweet: Apples, sugar, or cinnamon

Instructions:

  1. Prepare the Batter:
    • In a large mixing bowl, whisk together the flour and salt.
    • Create a well in the center and add the eggs.
    • Gradually pour in the milk while whisking continuously to form a smooth, lump-free batter.
  2. Rest the Batter:
    • Allow the batter to rest for at least 15 minutes. This helps to blend the flavors and ensures a smooth texture.
  3. Cook the Pancakes:
    • Heat a small amount of butter or oil in a non-stick frying pan over medium heat.
    • Pour a ladleful of batter into the pan, swirling it around to coat the bottom evenly.
    • Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  4. Add Fillings (Optional):
    • For savory options, sprinkle ingredients like bacon, cheese, spinach, or mushrooms onto the pancake before flipping it.
    • For sweet variations, add apples, sugar, or cinnamon while cooking or as a topping afterward.
  5. Serve:
    • Serve the Swabian Pancakes hot, either on their own or with your choice of toppings. Enjoy the authentic taste of Southern Germany!
