Brägele – Fried Potatoes

Brägele is badische Bratkartoffeln, fried potatoes in local style.

Ingredients:

7 large potatoes
1 medium-sized onion
salt
olive oil and a bit of butter
100 g bacon
fresh parsley or chives, chopped

Preparation:

Brägele can be cooked from raw potatoes as well as with boiled potatoes. The boiled potatoes can be cut into slightly thicker slices.

Preparation with raw potatoes (classic):

  1. Wash, peel and cut waxy potatoes into thin slices. Peel and finely dice an onion.
  2. Heat some olive oil with some butter in a heavy skillet (preferably cast iron), add the potato slices and fry until golden brown for about 15-20 minutes, turning frequently.
  3. Just before the potatoes are cooked, add salt, diced onion and sauté (not too hot, otherwise the onions will become black and bitter.)
  4. Add chopped parsley (or chives) and bacon to the skillet for more flavor.
